Delicious!! Freezes very well!! Ingredients:
1 1/2 cups all-purpose flour |
2/3 cup confectioners' sugar |
3/4 cup butter, softened |
3 eggs, lightly beaten |
1 1/2 cups sugar |
3 tablespoons all-purpose flour |
1/4 cup lemon juice |
confectioners' sugar, additional |
Directions:
1. Combine first three ingredients until crumbly. Put into a greased 13 x 9 pan. Pat down and bake 20 minutes at 350 degrees.
2. In a bowl, whisk eggs, sugar, flour and lemon juice until frothy. Pour over hot crust.
3. Bake until golden brown (approximately 20 minutes). Cool and dust with confectioner's sugar.
