Taco? Fried? This kind of reminds me of a quesadilla, but my neighbors from Mexico told me they were fried tacos, so I can go with that! And without too much help, I lightened them up. You could go lighter by using 2% mexican cheese blend, or vegetarian by using black beans instead of chicken... Ingredients:
1 whole wheat tortilla |
2 t salsa |
1/2 chicken breast, cooked, shredded |
1 serving mozzerella cheese (1/4 cup) |
Directions:
1. Mix together chicken breast and salsa. This helps keep the chicken breast moist without making your fried taco runny. And no one likes food that is supposed to be crispy, and cheesy to be runny. 2. Spritz tortilla with non-stick, butter flavored spray on one side. Put sprayed side down into a hot frying pan. Spread chicken breast/salsa mix on one half, cheese on the other. Once cheese starts melting, fold in half. (I'm a firm believer of putting the cheese side on top...and I use tongs, they are so much easier for this than a spatula.) 3. Flip as needed, until both sides are golden brown and crispy. 4. Remove from pan, use a pizza cutter to slice into four pieces. 5. Serving ideas (these aren't included in nutritionals, because I don't know what sounds good to you!): 6. You can eat it as is 7. You can serve it with a hot sauce, more salsa, or sour cream. 8. You can toss lettuce and any of the following together with ranch dressing and put it on top, kind of like a tostada: jalapenos, tomatos, green onions, white onions, avadaco, or guacamole. Mmm. |
