Hearty White Chicken Chili |

This is a great quick white Chili that is a great choice for a week night meal. Ingredients:
2 medium onions, chopped |
1 tablespoon olive oil |
2 cloves garlic, finely chopped |
3 cups chicken broth |
2 tablespoons chopped fresh cilantro |
2 tablespoons lime juice |
1 teaspoon ground cumin |
1/2 teaspoon dried oregano leaves |
1/2 teaspoon crushed red peppers |
salt to taste or approx 1/4 teaspoon |
1 can white shoepeg corn, drained |
2 cans great northern beans |
2 cups chopped cooked chicken breast |
salsa verde |
Directions:
1. Heat olive oil in dutch oven or medium stock pot. Cook onions and garlic, stirring occasionaly until onions are tender. 2. stir in remaining ingredients except chicken and salsa verde. Heat to boiling and reduce heat. 3. Simmer uncovered 20 minutes. 4. Stir in chicken and heat until chicken is hot 5. Serve with salsa verde. |
