Thick and warming and highly nutritious Ingredients:
1 tblsp olive oil |
150 g raw onion |
100 g raw carrot |
1 clove garlic |
100 g celery |
100 g raw sweet potatoes |
100 g raw white cabbage |
100 g raw sweet red pepper |
100 g raw celeriac |
100 g raw potato |
50 g red lentils |
10 g smoked bacon |
250 ml chicken stock |
Directions:
1. chop all the vegetables 2. fry the onion gently in the oil with the bacon until soft 3. add all the vegetables and fry gently for 10 minutes or until softened 4. add chicken stock and simmer for 30 mins 5. blaend with a hand blender and serve with crusty wholemeal bread |
