This is great to put together when you're looking for something hearty to make but don't have any protein around. To make it truly vegetarian, you could use vegetable broth. Ingredients:
2 (13 3/4 ounce) beef broth |
1/3 cup thinly sliced carrot |
1/3 cup thinly sliced celery |
1/3 cup chopped onion |
1 cup diced raw potato |
1/2 cup frozen peas |
1/2 cup frozen lima beans |
1 (8 ounce) can tomato sauce |
1/4 teaspoon dried thyme |
Directions:
1. In saucepan, combine all ingredients. Bring to a boil, then reduce heat. 2. Simmer, covered, 20 minutes. |
