Hearty Vegetable Barley Soup |

A great soup to warm you up on a cold day. Great with a toasted crusty roll! Ingredients:
1 (40 g) package onion soup mix |
1 (15 ounce) can black beans |
1 (5 ounce) can tomato paste |
1 1/2 cups carrots |
3/4 cup barley |
3/4 cup celery |
1 cup frozen corn |
1 cup frozen mixed vegetables |
8 cups water |
salt and pepper |
Directions:
1. In a large saucepan or stock pot, dissolve the onion soup mix in the water. 2. Add each of the other ingredients and stir well. 3. Bring to a boil and then turn down to low heat. 4. Simmer covered for a minimum of 1 hour to allow barley to cook. 5. Serve immediately. Great reheated as well. |
