Great, hearty soup for a nice, cold, winter day! Very filling! Very delicious! I learned this recipe in my home ec class and now all family and friends make it every winter! Leave out the meat and this can easily be a vegetarian meal. Can add hominy or any other beans to this also. Ingredients:
1 1/2 lbs ground beef or 1 1/2 lbs ground turkey or 1 1/2 lbs chorizo sausage |
1/2 cup chopped onion |
1/2 cup chicken broth or 1/2 cup beef broth or 1/2 cup vegetable broth |
1 (16 ounce) can stewed tomatoes |
1 (16 ounce) can red kidney beans, drained |
1 (15 1/4 ounce) can whole kernel corn, eg 1 pkg. frozen corn instead of canned (drain part of liquid) |
1 (18 ounce) can tomato sauce |
1/4 cup taco sauce |
1 -2 teaspoon chili powder (to your spicy level) |
1 teaspoon garlic powder |
4 -5 dashes tabasco sauce |
Directions:
1. Brown ground beef and onion, drain. Add remaining ingredients and simmer, about 20 minutes. Put in soup bowls. Top with: sour cream, cheddar cheese, crushed fritos, sliced green onions, guacamole (optional). |
