Hearty Taco Salad

The best taco salad recipe! Very filling & tastes great the next day. Super easy to double to feed as many as you need.
Ingredients:
1 lb ground beef
1/2 yellow onion, diced
1 (1 1/4 ounce) packet taco seasoning
1 (11 ounce) can mexicorn, drained
1 (15 ounce) can black beans, drained
1 (16 ounce) bottle catalina dressing, divided
1 (14 1/2 ounce) bag fritos corn chips
2 cups shredded cheese (i use mexican blend)
Directions:
1. Brown ground beef with onion. Drain & return to pan. Add taco seasoning & prepare as directed on package. Set meat aside to cool.
2. Mix beans, corn, and cheese in a large bowl. Add cooled beef. Add half a bottle of Catalina dressing and about half the Fritos. Mix well.
3. Add Catalina dressing to taste. Serve over remaining Fritos or rice.
