Hearty Spinach Mushroom Soup |

We find this indesribably delicious, hope you do too! From a Fast and Healthy book 1996 Ingredients:
2 tsp margarine or butter |
1 (8 oz) pkg sliced fresh mushrooms (3 cups) |
1/2 c finely chopped carrot |
1/2 c finely chopped onion |
1 (14 1/2 oz) can chicken broth |
1 1/2 c spinach leaves, veins removed |
1/8 t nutmeg |
dash pepper |
2 c skim milk |
1/4 c flour |
4 oz. cream cheese |
4 oz. (1 cup) shredded swiss cheese |
Directions:
1. Melt margarine in large pan over medium heat 2. Add vegetables; cook & stir about 3 minutes 3. Add broth, spinach, nutmeg and pepper, mix well 4. In a small bowl, whisk milk and flour until well blended 5. Add to spinach mixture; cook, stirring constantly, until thick and bubbly 6. Add cheeses; cook and stir until melted 7. Serve 8. Serving size: 1 1/4 C 250 calories |
