Hearty Shrimp Amp Sausage Chowder |

This hearty and savory chowder is much lighter in taste than the standard cream-based varieties but a filling warm-up on a blustery day. It is easy to make but fancy enough for a casual apres-ski dinner party when paired with crusty bread and a salad. Ingredients:
3 slices bacon, chopped |
1 onion, chopped |
1/2 c green pepper, diced |
1 1/2 c chicken broth |
1 1/2 c water |
1 can diced tomatoes ( fire-roasted are especially good in this) |
1 bay leaf |
1/2 t salt |
1/4 t pepper |
2 dashes tabasco (green or red) or to taste |
1 1/2 lb. cooked, peeled shrimp |
1/2 lb. mild bulk italian sausage |
3 t chopped parsley (optional) |
Directions:
1. Thaw shrimp in cool water if frozen. 2. In a large soup pot or Dutch oven, cook the bacon until nearly crisp. 3. Add onion and green pepper and saute 10 minutes until soft. 4. Add broth and water. 5. Stir to mix. 6. Add tomatoes, bay leaf, salt, pepper, and Tabasco. 7. Bring to a boil and then simmer 15 minutes. 8. While broth and vegetables simmer, brown and crumble the sausage until cooked through. 9. Drain off any grease. 10. Add sausage and shrimp to the soup pot and heat through (less than 5 minutes). 11. Sprinkle in the parsley if desired and serve in big bowls. |
