This meal is wonderful comfort food! This recipe is from a local newspaper. Ingredients:
3/4 lb pasta (i use fusilli) |
1 tablespoon olive oil |
1 lb spicy italian sausage |
1 onion, chopped |
4 garlic cloves, minced |
1 (14 1/2 ounce) can chicken broth (i use reduced sodium) |
1 teaspoon dried basil |
1 (14 1/2 ounce) can diced tomatoes |
1 (10 ounce) package frozen chopped spinach |
1/2 cup parmesan cheese, grated (adjust to your liking) |
Directions:
1. Cook pasta per the package instructions until al dente. Drain and reserve. 2. In a large skillet, heat oil and sausage. Cook sausage through until no pink remains. During the last five minutes of cooking, add onion and garlic to skillet. 3. Once sausage is done, you may need to drain off excess grease. Then, add broth, basil, and tomatoes with their liquid to sausage mixture in the skillet. Cook over medium heat for 5 minutes. 4. Add chopped spinach. Cover skillet and simmer on reduced heat until spinach is tender. Add pasta to skillet and mix. 5. Sprinkle with Parmesan cheese and serve immediately. |
