This is great inexpensive dish to serve guests for brunch or have yourself a hearty breakfast for during the week. The recipe freezes well. Ingredients:
5 eggs |
3/4 evaporated milk |
8 oz shredded cheese |
veggies (i use small can of mushroom and fresh steamed broccoli or zucchini) |
cooked: ground turkey, bacon, sausage or whatever you want - optional |
spices (i use nutmeg, salt, pepper, dried shallots) |
1 pie crust (buy at store or make your own) |
Directions:
1. Preheat oven 375 2. Beat eggs and evaporated milk, add spices and remaining ingredients (Remember the veggie and cooked meat need to be cooled completely before adding to the egg mixture) 3. Pour mixture into pie crust 4. Bake for about 38 minutes. 5. Cool for about 15 minutes before serving. |
