Hearty Potato and Leek Chowder |

I got this recipe from a German friend of mine. The smell as you cook will draw all your neighbors. It is a soup that will leave you satisfied. Ingredients:
3 large leeks, cleaned and cut into 1/2 slices |
8 ounces packaged sliced ham, cut into strips |
2 large carrots, cleaned and sliced thinly |
3 cups chicken broth |
2 tablespoons fresh parsley or 2 teaspoons dried parsley |
2 tablespoons butter or 2 tablespoons margarine |
1 lb potato, peeled and diced |
1 medium onion, chopped |
1 cup milk (optional) or 1 cup heavy cream (optional) |
1/2 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. To prepare Leeks, cut off the root ends and tough green tops, however, leave about 3 inches above the while part of the leeks. Next you cut them lengthwise and rinse under running water to remove sand. Cut into 1/2” slices. 2. In a large saucepan, melt butter or margarine. Add leeks, potatoes, carrots, ham and onion. Cook slowly until soft, about 8 to 10 minutes. Stir often. 3. Add broth and cover and bring to a boil. Then reduce the heat and simmer until potatoes are tender-about 25 minutes. 4. Add milk or cream if desired. Gradually heat gently but do not boil. Stir in parsley, salt and pepper to taste. |
