It is a comfort food, quite easy and nutritious. Ingredients:
1 3/4 cups penne pasta, uncooked |
1 lb ground beef |
1 teaspoon garlic, minced |
1 (15 ounce) can tomato puree |
1 (14 1/2 ounce) can beef broth |
1 1/2 teaspoons italian seasoning |
1 teaspoon worcestershire sauce |
1/4 teaspoon salt |
1/4 teaspoon pepper |
2 cups fresh spinach, chopped |
2 cups part-skim mozzarella cheese, shredded |
Directions:
1. Cook pasta according to package directions. 2. Meanwhile in a dutch over, cook beef and garlic over medium heat until meat is no longer pink; drain. 3. Stir in the tomato puree, beef broth, Italian seasoning, Worcestershire sauce, salt and pepper. 4. Bring to a boil. 5. Reduce heat; simmer, uncovered, for 10 to 15 minutes or until slightly thickened. 6. Add spinach; cook for 1 -2 minutes or until spinach is wilted. 7. Drain pasta; stir into beef mixture. 8. Sprinkle with mozzarella cheese; cover and cook for 3 or 4 minutes or until cheese has melted. |
