A pretty darn good mexi recipe for my microwave I thought I would share too! Ingredients:
1 pound lean boneless pork, cut into 1 inch cubes |
1 small onion, chopped |
1/2 pound zucchini |
1 16-ounce can of diced tomatoes |
1 8-ounce can whole kernel corn, drained (try the mexi corn) |
1 teaspoon sugar |
1/2 teaspoon salt (optional) |
1/4 teaspoon ground cumin |
1/4 teaspoon chili powder |
1/4 teaspoon garlic powder |
1/4 teaspoon pepper |
Directions:
1. In a 2 quart microwavable casserole combine pork and onion. 2. Microwave, covered, on high 5 to 7 minutes, stir. 3. Reduce power to medium; microwave 5 to 7 minutes or until meat losses its pink color, stirring once after 4 minutes. 4. Slice zucchini; halve large slices. 5. Stir zucchini, un-drained tomatoes, corn, sugar, salt, cumin, chili powder, garlic powder, and pepper into pork mixture. 6. Microwave, covered, on medium (50%) 25 to 35 minutes or until meat and vegetables are tender; stirring every 10 minutes. 7. Let stand, covered, 10 minutes. 8. Makes 4 servings. |
