This is my own version of a beef soup, I like to make this with leftover meatloaf, but you could really use whatever kind of beef you like, and as with most soups, whatever veggies/pastas you prefer. Also for the stock you can use canned broth or use powdered or base mixes. Ingredients:
1 lb cooked meatballs (your own recipe or store bought) or 1 lb meatloaf (your own recipe or store bought) |
your preference beef stock or 6 cups broth |
2 cups water |
1 (10 1/2 ounce) can condensed tomato soup |
1/2 cup ketchup |
1/2 an onion |
1 teaspoon fresh crushed garlic or 1/2 teaspoon garlic powder |
2 cups frozen mixed vegetables |
2 potatoes, diced |
1/2 cup small shell pasta (such as alphabet stars etc more if you prefer) |
salt & pepper |
Directions:
1. Saute onion in a bit of butter or oil, add garlic at the end of Saute if using fresh. 2. Add the potatoes to saute for just a minute. 3. Add stock, water, soup, ketchup, garlic powder (if not using fresh), and diced potatoes. 4. Bring all to a low simmer for 15 minutes then add frozen veggies. 5. Continue to simmer until veggies and potatoes are almost tender. 6. Add meatballs/meatloaf and pasta, simmer until pasta is cooked and meat is heated all the way through. Taste and season as you like. 7. Cool for a few minutes and enjoy! |
