Hearty Lentil Soup (Bss)

Ingredients:
1 cup lentils
1/2 cup red onion
1/4 cup poblano pepper
1/4 cup carrot
1/2 cup celery
1 garlic clove
1 tablespoon olive oil
2 1/2 cups vegetable broth
1/2 teaspoon fresh rosemary
1/2 teaspoon fresh oregano
1/2 teaspoon fresh parsley
1/8 teaspoon cayenne pepper
1/2 teaspoon sea salt
Directions:
1. Drain white beans, rinse, and dry.
2. Mince garlic. Dice onions, carrots, and celery.
3. In a stock pot, heat oil over low to medium heat. Sauté onions for 2–3 minutes. Add carrots, celery, and garlic. Sauté for an additional 4–5 minutes or until vegetables start to become soft.
4. Add vegetable broth, beans, and all herbs and spices. Simmer covered for 20–30 minutes stirring occasionally.
5. Remove from heat and serve or chill for later.
