This is a hearty lentil soup using pardina lentils, which keep their shape and do not get mushy. It is vegan, and packed with protein and flavor! Ingredients:
16 ounces of pardina lentils |
1 tablespoon olive oil |
1 cup tomato sauce |
1 cup chopped green pepper |
2 garlic cloves, minced |
2 liters water |
1 cup chopped carrot |
1/2 teaspoon thyme |
1/2 teaspoon bay leaf |
1 pinch cayenne pepper |
salt |
Directions:
1. Mix everything in a crock pot and cook on high for 4 hours or on low for 8 hours. |
