great lentils Ingredients:
1 medium onion |
2 garlic cloves |
2 stalks celery |
2 teaspoons olive oil |
15 ounce canned tomatoes, ready cut |
1/2 teaspoon dried oregano |
1 dash black pepper |
1 cup lentils |
4 cups chicken broth |
Directions:
1. Peal onion and cut into 1/2 inch pieces. Peel and finely chop garlic. wash celery and cut into 1/4 inch pieces. 2. Heat the oil in a large pot over medium heat. add the onion, garlic, celery and cook about 5 min, until veggies soften. add tomatoes and their liquied, oregano, pepper, lentils, chicken broth. 3. bring to a boil over high heat. then turn heat to los and cook covered for 20 min. Test lentils to see if they are soft. If too hard cook for 5 or 10 more minutes. |
