Hearty Lentil and Chicken Stew |

Ingredients:
2 teaspoon(s) olive oil |
3/4 pound(s) chicken breasts, cubed into 1 in. pieces |
1 onion, diced |
1 yellow pepper, diced |
1 red pepper, diced |
4 clove(s) garlic, minced |
3/4 cup(s) lentils |
1 1/4 cup(s) fat-free, reduced-sodium chicken broth |
1/2 cup(s) water |
1 cup(s) diced no salt-added tomatoes w/juice |
1 teaspoon(s) ground ginger |
1/2 teaspoon(s) ground coriander |
1/4 teaspoon(s) cinnamon |
salt & freshly ground black pepper, to taste |
Directions:
1. IN large skillet, heat oil over medium-high heat. Add chicken & saute for 5 minutes. Remove chicken w/slotted spoon & set aside on plate. To same pan, add onion, peppers & garlic and saute for 5 minutes. Add lentils, broth, water, tomatoes and spices, and bring to boil. 2. Reduce heat, cover and simmer for 20 minutes until lentils are tender. Return chicken to pan and cover and simmer for 15 minutes more. Serve w/crusty, whole-wheat bread and garnish with chopped fresh cilantro, if desired. 3. Refrigerate any leftovers. |
