Ready, Set, Cook! Special Edition Contest Entry: I created this recipe for my daughter as she loves a hearty breakfast. This dish can be served for dinner or breakfast with scrammbled eggs.
Ingredients:
1 lb italian pork sausage (hot optional)
2 garlic cloves, minced
1/3 cup red onion, chopped
1/2 cup red bell pepper, chopped
1 stalk fennel, chopped
8 ounces black beans, drained
8 ounces corn, drained
6 ounces frozen chopped spinach (drained)
1 (20 ounce) bag simply potatoes diced potatoes with onion
1/4 cup seasoned bread crumbs
1/2 teaspoon cumin
1 dozen egg (optional)
Directions:
1. Remove the sausage from its casing and crumble into a pan. Brown the meat and add the onions, red bell peppers, fennel and garlic. Saute this together for 5 minutes and then add potatoes to the pan along with the cumin. Cook mixture for another 5 minutes on a low flame. Add the black beans, corn and spinach and mix well. Place the mixture in a casserole dish and sprinkle the bread crumbs on top. Bake 350 degrees for 30 minutes. Serve it with scrabble eggs if desired.
