Ready, Set, Cook! Special Edition Contest Entry: I created this recipe for my daughter as she loves a hearty breakfast. This dish can be served for dinner or breakfast with scrammbled eggs. Ingredients:
1 lb italian pork sausage (hot optional) |
2 garlic cloves, minced |
1/3 cup red onion, chopped |
1/2 cup red bell pepper, chopped |
1 stalk fennel, chopped |
8 ounces black beans, drained |
8 ounces corn, drained |
6 ounces frozen chopped spinach (drained) |
1 (20 ounce) bag simply potatoes diced potatoes with onion |
1/4 cup seasoned bread crumbs |
1/2 teaspoon cumin |
1 dozen egg (optional) |
Directions:
1. Remove the sausage from its casing and crumble into a pan. Brown the meat and add the onions, red bell peppers, fennel and garlic. Saute this together for 5 minutes and then add potatoes to the pan along with the cumin. Cook mixture for another 5 minutes on a low flame. Add the black beans, corn and spinach and mix well. Place the mixture in a casserole dish and sprinkle the bread crumbs on top. Bake 350 degrees for 30 minutes. Serve it with scrabble eggs if desired. |
