Much like a ham gumbo with oatmeal! I like to add rutabaga and apple sometimes! These should be added with the ham potatoes and carrots if you do.
Ingredients:
1/2 chopped onion
2 cups chopped celery
1 cup cubed ham
1 small potato, diced
1 cup chopped carrot
raisins (optional)
1 cup instant oatmeal
3 cups water
salt or pepper
Directions:
1. Combine onion, celery and water in a pot and bring to a boil. After water reaches boiling, reduce to medium or low heat.
2. Add ham, potato, carrots and raisins and let simmer for no more than 20 minutes or until carrots are less firm (you still want to see a slight crisp to them for the sake of baking! If they're too soft they'll mush!).
3. Drain broth into a separate bowl and use it to prepare instant oatmeal as a substitute for hot water!
4. Place simmered ingredients in a baking dish and cover with oatmeal. cover dish with foil and bake at 350°F for about 10 minutes or until oatmeal begins to brown (or even toast depending on how you like your baked oatmeal!).
5. Should yield 4 servings.
