Hearty Ham and White Bean Soup |

Ingredients:
1 tablespoon(s) olive oil |
1 sweet onion chopped medium pieces |
1 1/2 teaspoon(s) italian seasoning |
2 carrots large, peeled, halved lenghtwise and chopped |
1/2 cabbage cored and cut into bite size shreds |
12 ounce(s) ham lean and diced into small pieces |
1 quart(s) chicken broth |
1 can(s) diced tomatoes 14.5 oz petite |
2 can(s) white beans undrained |
2 tablespoon(s) fresh parsley chopped |
Directions:
1. Heat the oil over medium-high in a soup kettle. Add the onion, saute until soft and golden, about 5 minutes. Add the Italian seasoning and saute until fragrant, about 1 minute. Add remaining ingredients, then bring to a full simmer, skimming any foam that rises to the surface. Reduce heat to low, simmer gently (partially covered) until the vegetables are just cooked and flavors blended, about 15 minutes. Stir in parsley, cover and let stand for 5 minutes |
