The corn chowder is really great, it's got a kick and is lowfat, freezes well. Ingredients:
4 ears fresh corn, de-cobbed |
1 can corn |
1-2 small onions chopped |
1 tsp celery salt |
1/2 tsp cayenne pepper |
3 cloves minced garlic |
1 bay leaf |
3 russet potatoes diced |
chicken stock |
1 3/4 cup 2% milk |
salt |
pepper |
crutons |
Directions:
1. saute chopped onions in olive oil 2. add celery salt, cayenne pepper, and salt and pepper 3. cook until onions are soft 4. add potatoes, corn, and bay leaf 5. add chicken stock 6. bring to boil, then simmer 25 mins or until potatoes are done 7. add 1 3/4 cup room temp milk 8. simmer a few more mins 9. blend in food processor to desired consistency 10. serve with crutons |
