Chili that fills the tummy. Ingredients:
1 lb ground beef |
1 yellow onion |
1/2 cup fresh mushrooms or 1/2 cup canned mushroom |
salt |
6 -8 dried red chilies |
14 1/2 ounces beef broth |
salt |
2 garlic cloves |
4 ounces sliced black olives |
14 1/2 ounces diced tomatoes |
14 1/2 ounces kidney beans, lt.red |
sour cream, avocado, cheddar cheese |
Directions:
1. Brown meat; drain fat. Add onion and mushrooms to meat and saute salt to taste. Meanwhile in a saucepan bring to boil chilis (de stemed), broth salt and garlic to a boil. Reduce heat and simmer 15 minute Add chili mixture to food processor and puree well about 30 sec. Strain chili into pot. Add meat mixture, olives, tomatoes,and beans. Simmer about 15 min or could be put in crockpot at this time and heated on low for 2-4 hours. Top with a dollop of sour cream, avocado slices and shredded cheese. Enjoy! |
