âI made this recipe up one night when I was looking or a quick and tasty meal for myself and my kids, âwrites Meredith Beyl of Stillwater, Oklahoma. âIt was an instant hit! It makes a great meal any time of the day.â Ingredients:
6 frozen fully cooked breakfast sausage links, thawed and sliced |
6 ready-to-serve fully cooked bacon strips, diced |
6 eggs, lightly beaten |
2 tablespoons whole milk |
1 teaspoon salt |
1/4 teaspoon pepper |
1 cup (4 ounces) shredded colby-monterey jack cheese |
3 pita breads (6 inches), halved |
Directions:
1. In a nonstick skillet, cook sausage for 2 minutes. Add bacon; cook 4 minutes longer or until sausage is heated through and bacon is crisp. Remove and keep warm. 2. In a small bowl, whisk the eggs, milk, salt and pepper. Pour into the skillet; cook and stir over medium heat until eggs are almost set. Add sausage mixture and cheese. Cook and stir for 2 minutes or until eggs are completely set and cheese is melted. Spoon into pita halves. Yield: 6 servings. |
