Hearty Brew and Cheese Soup |

Ingredients:
1 1/2 cups diced smoked ham |
1 cup finely chopped onion |
1/2 cup thinly sliced celery |
2 tablespoons margarine, melted |
1 (10 1/2-ounce) can condensed chicken broth, divided |
3 cups half-and-half |
1 (12-ounce) can beer |
1 (16-ounce) loaf process cheese spread, cubed |
3 tablespoons all-purpose flour |
Directions:
1. Saute ham, onion, and celery in margarine in a Dutch oven over medium heat until vegetables are tender. 2. Measure 1/4 cup chicken broth, and set aside. Add remaining broth, half-and-half, beer, and cheese to ham mixture. Cook over medium heat, stirring constantly, until cheese melts. 3. Combine reserved 1/4 cup broth and flour in a small bowl; stir until smooth. Add flour mixture to mixture in pan, stirring constantly. Cook over medium heat, stirring constantly, until slightly thickened. |
