I found this for a response to healthy breakfast on the run with natural ingredients. I intend to make these for my DH and I too. I found it on Iowa State University's whole grains food recipes site. Ingredients:
2 eggs, beaten |
1 cup unsweetened applesauce |
1/4 cup honey |
1 teaspoon vanilla |
1 teaspoon baking soda |
1/2 cup flour |
1 teaspoon cinnamon |
1/2 teaspoon salt |
1/2 cup wheat germ |
1/4 cup oat bran |
3 cups old fashioned oats |
1/4 cup raisins |
1/2 cup walnuts |
Directions:
1. Blend together eggs, applesauce, honey and vanilla. 2. Add baking soda and stir. 3. Add remaining ingredients and stir until moist and blended. 4. Spoon into either a 12 cup cupcake pan or into a 9x13 baking pan. When spooning into pan, keep loose. Do not pack down. 5. Bake at 375 degrees from approximately 15 to 20 minutes. 6. Cool. 7. Makes 12 servings. |
