2 quarts vegetable broth |
1/2 cup dried garbanzo beans |
1/2 cup dried kidney beans |
1/2 cup thinly sliced carrot |
1 cup cubed potato |
1 cup cubed zucchini |
1 medium onion, sliced |
2 garlic cloves, minced |
1/2 cup cooked elbow macaroni |
2 cups spinach or 2 cups watercress |
2 -4 tablespoons lemon juice |
salt and pepper |
Directions:
1. Combine all ingredients except macaroni, spinach, lemon juice, salt and pepper in slow cooker; cover and cook on low until beans are tender 6-8 hours. 2. Stir in macaroni and spinach during last 20 minutes. Season to taste with lemon juice, salt and pepper. |
