Hearty Baked Potato Salad |

I haven't tried this yet but plan to do so soon. It sounds really good. Ingredients:
8 peeled red potatoes |
1/2 cup chopped onion |
2 tablespoons chopped fresh parsley |
1 (11 ounce) can condensed cheddar cheese soup (undiluted) |
1/2 cup mayonnaise |
1/2 cup plain yogurt |
4 ounces bacon, cooked and crumbled |
paprika |
Directions:
1. In a saucepan, cover potatoes with water and boil until tender; drain. 2. Cut into 1-1/2 chunks. 3. Spread evenly in a 13x9x2 baking pan. 4. Combine onion, parsley, soup, mayonnaise and yogurt; pour over potatoes. 5. Sprinkle bacon and paprika over top of potato mixture. 6. Cover with foil and bake at 350 degrees for 30 minutes. 7. Uncover and bake 30 minutes more. |
