This spicy rice recipe uses brown rice and fresh vegetables for added nutrients. Ingredients:
cooking spray |
1/2 c white onion, chopped |
1 1/2 c brown rice |
1 small green bell pepper, diced |
2 celery stalks, diced |
2 jalapeno peppers, deseeded and diced |
2 c tomatoes, seeded and diced |
3 c water |
2 garlic cloves, minced |
2 t chili powder |
1 t cumin |
1/4 t cayenne pepper |
Directions:
1. In a pot over medium heat sauté onion, garlic in cooking spray until onion is translucent. 2. Add water, rice, bell pepper, celery, jalapenos, tomatoes to onion and garlic. 3. Bring mixture to a boil, reduce heat and add chili powder, cumin, cayenne and coriander. 4. Continue to simmer for 50 minutes. |
