Heart Healthy Orange/Cranberry cake. Ingredients:
1 cup cranberries, dried |
1/4 cup sugar |
1/4 cup orange juice |
1 cup whole wheat flour |
1 cup whole wheat pastry flour |
3/4 cup soy flour |
1/2 cup ground flax seeds |
1/2 cup sugar |
2 teaspoons baking powder |
1 teaspoon baking soda |
1/2 teaspoon salt |
1 tablespoon orange rind, grated |
1 egg, beaten |
1/4 cup olive oil |
1 1/4 cups orange juice |
Directions:
1. Mix together Cranberries, Sugar and Orange Juice. Set aside. 2. In separate bowl, mix together the rest of the dry ingredients. 3. Combine Oil, Egg and Orange Juice. Pour liquid ingredients into dry ingredients. 4. Mix until all ingredients are moistened. 5. Fold in Cranberry mixture. 6. Pour into 8x8 baking dish. Bake at 375 for 30-35 minutes. |
