Heart Healthy Apple Pancakes |

This is a modified version of the Polish Apple Pancakes found here on . My kids devoured these and clamour for more - a fantastic, warm and delicious way to kick off a weekend or holiday. Hope you enjoy them as much as we do! (I substituted applesauce for the oil in the original recipe, then used the remaining applesauce as a topping on the pancakes in place of syrup.) Ingredients:
1 1/3 cups whole wheat all-purpose flour |
1/2 teaspoon salt |
1/2 teaspoon cinnamon |
1 egg |
1 tablespoon honey |
1 cup low-fat milk |
1 tablespoon applesauce |
1 medium apple, peeled, sliced thinly, and cut into bite-sized pieces |
chopped walnuts (optional) |
confectioners' sugar (optional) |
Directions:
1. In a bowl, blend the flour, salt and cinnamon together. 2. In a separate bowl, whisk the egg. Add honey, milk and applesauce. Add to dry ingredients and mix until incorporated. 3. Fold in apples and walnuts (optional). 4. Pour by 1/2-cupfuls onto a lightly greased hot griddle, then spread into large circles. 5. Flip pancakes when bubbles form. Cook until golden brown and apples are tender. 6. Top with remaining applesauce and a sprinkle of confectioners sugar. |
