i love zucchini bread and this is a healthier recipe i found on the internet
Ingredients:
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
1 pinch salt
2 egg whites
1/4 cup sugar
1/2 cup splenda sugar substitute
1/4 cup canola oil
1/4 cup orange juice
2 tablespoons plain nonfat yogurt
1 teaspoon vanilla extract
1 orange, zest of
1 lemon, zest of
1 zucchini, grated
Directions:
1. 1. Grease and sugar a 9 x 5 inch loaf pan. Preheat oven to 350 degrees.
2. 2. Sift flour, baking soda, baking powder, cinnamon and salt into bowl. Separately, beat the eggs and sugar until well mixed and slightly thickened. Beat in the oil, juice, yogurt, vanilla, and grated zests. Add the dry ingredients and zucchini and mix well by hand.
3. 3. Pour batter into prepared pan and bake for 50 minutes or until deep golden brown. Cool on wire rack.
