Healthy Yummy Banana Bread |

No white flour, refined sugar, or eggs. Good toasted for a snack for you and the kids. Ingredients:
1 1/2 cups whole wheat pastry flour |
2 tablespoons wheat germ |
2 tablespoons ground flax seeds |
1 teaspoon cinnamon |
1/4 teaspoon nutmeg |
2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
1/2 cup toasted pecans (optional) |
1/4 cup unsweetened applesauce |
1/2 cup maple syrup |
1 tablespoon vanilla |
1 cup very ripe banana, mashed |
1 tablespoon water |
Directions:
1. Mix dry ingredients, and sift. 2. Mix remaining ingredients, and incorperate into the dry mixture. 3. The batter is thick. Place in a 8 1/2 x 4 loaf pan. 4. Bake at 350 for 35 - 40 minutes or until a toothpick inserted in the center comes out clean. 5. Cool before cutting. |
