Healthy yet Yummy Bran Muffins |

This low cal, healthy version of bran muffins is a huge hit with my kids and so simple to make. They often ask me to make them. Just the right amount of sweet without all the calorie loaded ingredients. Ingredients:
1 cup white flour (or 1/2 cup white and 1/2 cup whole wheat) |
1 cup bran flakes |
3/4 cup raisins |
2 teaspoons baking powder |
2 teaspoons baking soda |
1/2 teaspoon salt |
1 beaten egg |
1 cup skim milk |
3 tablespoons apples, sauce |
5 tablespoons honey |
1 teaspoon apple cider vinegar |
Directions:
1. Preheat oven to 425 degrees. 2. Spray muffin pan with cooking spray (muffins will stick to paper liners). 3. Mix dry ingredients together in large bowl. 4. In a separate bowl combine remaining ingredients. 5. Add dry ingredients to wet ingredients. 6. Mix together until smooth. 7. Fill each tin approximately 2/3 full (more for a larger muffin top). 8. Bake approximately 18 minutes or until golden brown. |
