Healthy Vegetable, Beef, and Barley Soup |

My husband LOVES homemade soup, so I am always trying new recipes. However, I tend to have a hard time following recipes without adding my own changes! When I was making a beef and barley soup recipe tonight I ended up making several more changes than usual. It turned out SO extra yummy that I decided to make it my own recipe! It might look complicated, but it's actually really easy to make. Also, it should make plenty of leftovers. Ingredients:
1 lb ground beef or 1 lb ground turkey |
1 medium onion |
3 minced garlic cloves |
1 teaspoon thyme |
1 teaspoon oregano |
1 teaspoon basil |
1 teaspoon celery seed |
1 teaspoon parsley |
1 teaspoon black pepper |
2 cups canned tomatoes (or 4 fresh) |
5 medium carrots, chopped |
2 cups frozen corn |
2 cups zucchini, chopped |
2 bay leaves |
1 cup pearl barley, dry |
10 cups water |
6 teaspoons beef bouillon |
1 tablespoon worcestershire sauce |
1 tablespoon salt (optional) |
1/4 cup red wine (optional) |
Directions:
1. In a large soup pot over medium heat cook ground meat, onion, and garlic until meat is no longer pink. 2. Add spices and cook for another couple of minutes. (This will smell delicious!) 3. Add all remaining ingredients, turn to high heat and bring to a good rolling boil, then reduce heat and simmer for about an hour. Enjoy! |
