Healthy Vegan Berry Muffins |

Using frozen berries, you have lots of taste options with these super easy, healthy vegan muffins. I promise you won't miss eggs! Ingredients:
1 tablespoon ground flax seeds |
3 tablespoons water |
1 cup whole wheat flour |
1/2 cup spelt flour |
1/2 cup oat flour |
2 teaspoons baking powder |
2 teaspoons baking soda |
1/2-3/4 cup artificial sweetener (i use sucanat) |
3/4 cup almond milk |
1/3 cup applesauce (you can use pumpkin, fig or prune puree as well) |
1 teaspoon vanilla extract |
1 cup berries (frozen) |
Directions:
1. 375 degree preheated oven You will a 12 cup muffin pan. 2. Mix together in a medium bowl and set aside the Ground Flax Seeds and Filtered Water. 3. Mix the dry ingredients together by sifting in a large mixing bowl. 4. Add the milk, applesauce and extract to the flax/water mixture. 5. Add the wet ingredients into the dry mix bowl stirring until just mixed. 6. Add the berries and stir until just mixed. 7. Spoon into muffin tins and bake for 20-25 minutes. 8. Let cool a few minutes on a wire rack. 9. Top with Earth Balance vegan spread and enjoy! :). |
