Oxygen Magazine - Fall 2008 Ingredients:
1 lb lean ground turkey |
2 egg whites |
1/2 cup whole wheat bread crumbs |
1/4 cup nonfat milk |
1/2 cup onion, diced |
1/2 cup carrot, shredded |
2 teaspoons italian seasoning |
1/2 teaspoon cinnamon |
salt & pepper, to taste |
1/2 cup tomato paste |
4 tablespoons water |
Directions:
1. Preheat oven to 375°F. 2. In a bowl, mix together turkey, egg whites, bread crumbs, milk, onion, carrots, 1 t Italian seasoning, cinnamon, salt and pepper. Press into loaf pan. 3. Whisk together tomato paste, water and remaining Italian seasoning. Spoon on top of meatloaf. 4. Bake for 50 minutes. |
