Healthy Toddler Vegan Muffins |

This is a variation of a recipe I made as my family is trying to be more healthy via 180 Degree Health metabolic healing. The sugar can be switched out for dextrose (the only sugar that doesn't use your liver to digest). Chia seeds are high in omega 3's and are used as an egg substitute since my 13 month old son is allergic to eggs. Lactose free for the hubby. Ingredients:
1 tablespoon chia seeds |
1 cup whole wheat flour |
2 cups rolled oats |
1 1/2 teaspoons baking soda |
1/4 teaspoon salt |
1 teaspoon cinnamon |
1 1/4 cups applesauce |
1/3 cup coconut oil |
1/2 cup brown sugar |
1 teaspoon vanilla |
Directions:
1. Make chia gel by mixing chia seeds, soaked for 10 mins in 1/4 cup water. 2. Preheat oven to 375 degrees. 3. Grease bottoms of muffin tin with butter or use muffin cups. 4. Whisk all dry ingredients together (except for oats and sugar). 5. Then mix in oats and set aside. 6. Separately mix applesauce, coconut oil, sugar and vanilla. 7. Stir in chia gel. 8. Make a well in the dry ingredients and pour wet ingredients into well. 9. Stir minimally - just enough to barely combine. 10. Fill each muffin well (in a 12 muffin pan) to the top 11. Put muffins in oven and turn temperature down to 350 degrees. 12. Bake for about 25 mins, or until muffins are browning. |
