Something I put together combining aspects different recipes. This recipe resembles many enchilda chicken dishes seen on zaar, with one particular difference being the use of yogurt. This adds to the protein of the meal as well as the flavor while not adding to the calories that heavy or sour cream would. An odd substitute you might say? Not at all, many Indian curry recipes use it as a healthy substitute for cream. The 'tang' of the yogurt blends well with the sweet salsa and combines harmoniously with the natural sweet & tangy flavor of the fresh cilantro. Please enjoy! Ingredients:
1 (12 ounce) can corn |
1 (12 ounce) can black beans |
1 cup plain nonfat yogurt |
2 chicken breasts |
1 cup peach pineapple chipotle salsa |
1/2 a bunch cilantro |
1/2 cup brown rice |
Directions:
1. Cut up chicken breasts into chunks and cook with garlic in a skillet on the stove. 2. Prepare rice while waiting. 3. When chicken is done add beans, salsa, and rice. 4. Add yogurt and diced cilantro, and remove from stove. 5. Serve with tortilla chips or alone. |
