Made these for dinner tonight, and they are just fab!! Had to share with someone who will appreciate!! The Dipping Sauce is heavenly!! Ingredients:
1 large yam or sweet potato --well washed and cut into french fry pieces |
7-spices middle eastern ( cinnamon, black pepper, cardamon, feenugreek, cloves , allspice, ginger, nutmeg) i get it at a lebanese bakery/store. |
2 tsp. olive oil |
non-stick spray |
sauce |
2 tablespoons orange marmalade |
2 tablespoons sour cream (or better than sour cream by tofutti) |
1 tsp. finely chopped red onion |
mix these three ingredients together and adjust amounts to taste. serve with finished healthy sweet potato fries. |
Directions:
1. In a deep narrow bowl, drip the oil. Next throw in your spices-i used about 2 teaspoons, and sprinkled more when the fries were spread on the baking pan + tin foil. But now, with the oil and the spices in the bowl, dump in the raw potatoes, and toss them with a wooden spoon or spatula, or big hand around and around and over and under until ~equally covered. If the 2 tsp oil isn't enuf, Use the Pam. Put the baking sheet in a 375 * F oven and bake about 15 minutes, check to see if browning on the bottoms, and turn them over. Check again in about 10 minutes, when crunchy all over (but not burned!!) |
