put the lime in the coconut and mix em both up! this sweet tangy muffin is soo good no one will think its good for you. healthy quick tasty breakfast,
Ingredients:
1 cup of plain, lime or vanilla yogurt
2/3 cup applesauce
1 egg
2/3 cup coconut or veg oil
1 tsp vanilla
2 limes juiced and zested, discard the rind
2 tsp baking soda
1 tsp sea salt
2/3 cup sugar
2/3 cup coconut
1 cup rolled or steel cut oats
2 cups flour
powered sugar for dusting if desired
Directions:
1. mix the wet and then add the dry, mix til just mixed
2. bake in a buttered and floured loaf pan or muffin pan at 375 until browned on top and tooth pick is clean, let cool completly and dust with powdered sugar if you want.
