Healthy Secret Chocolate Muffins |

Healthy snacking can still be yummy snacking when you include recipes like this one for chocolate muffins made with bran cereal. These are a real treat, and you don't have to feel the slightest tinge of guilt! Ingredients:
1 cup all bran cereal |
1 1/3 cups fat free milk |
1/4 cup smart balance oil or extra virg. olive oil |
1 teaspoon vanilla |
1 egg or 1/4 cup egg beaters |
1 cup packed brown sugar |
1 cup fat free baking mix (see recipe) |
1 cup unsweetened baking cocoa |
Directions:
1. Heat oven to 375°F. Place paper baking cup in each of 12 regular-size muffin cups. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor). 2. Mix cereal and milk together in a medium sized mixing bowl. 3. Let mixture sit for 3 to 15 minutes. 4. Stir in the applesauce (see Fat Free Baking Mix recipe) and all liquid ingredients. 5. Fold in the dry ingredients, one at a time. 6. Divide batter evenly among muffin cups. 7. Bake 16 to 19 minutes or until toothpick inserted in center comes out clean. Remove from pan immediately. 8. If you count calories - 188 cals and if you count WW pts - 3 pts per muffin. |
