Healthy Raisin Coconut Muffins |

I have adapted this recipe from #120465 and made it healthier. Ingredients:
1 1/4 cups whole wheat flour |
1 cup wheat bran |
1/2 cup brown sugar |
1 tablespoon baking powder |
1/2 teaspoon salt |
1/2 teaspoon cinnamon |
3/4 cup milk |
1/4 cup applesauce |
1 large egg |
1 teaspoon vanilla |
2 large ripe bananas, peeled and chopped |
1/2 cup raisins |
1/3 cup sweetened coconut |
Directions:
1. Preheat oven to 400°F and line 12-15 muffin cups with liners. 2. Mix the first 6 ingredients in a large bowl. 3. Add in the remaining ingredients and mix well. 4. Spoon batter into muffin cups. 5. Bake for 20 minutes or until toothpick comes out clean. 6. Cool on wire rack. |
