Healthy Pumpkin Dark Chocolate Chip Cookies |

I got this recipe from my son's preschool lesson from Horizons, I tweaked it to dark chocolate to make it a little healthier. These are more of a cake consistency puffy cookie. Ingredients:
1 (15 ounce) can pumpkin puree |
1 egg |
1/2 cup oil |
1 cup sugar |
2 teaspoons baking powder |
1 teaspoon cinnamon |
1 1/2 teaspoons salt |
1 teaspoon baking soda |
1 teaspoon milk |
1 teaspoon vanilla |
2 cups flour |
1 (12 ounce) bag dark chocolate chips |
Directions:
1. Preheat oven to 350. 2. Mix ingredients in order listed. 3. Drop spoonfulls on ungreased cookie sheet (or silicone mat). 4. Bake for 12-15 mins until puffy and cooked through. |
