Healthy Pineapple-Mango Salsa |

I saw this in Giant Food's Healthy Ideas spring edition and had to share it because it looks delicious, and fruit salsas without peppers are the only kind I will eat in their natural chunk state! (I always puree tomato-pepper-onion salsas to oblivion, just a quirk I have.) I'll probably omit the onion out of taste but am posting the recipe as written. Be sure to use pineapple tidbits that are packed in juice only, not sugar/syrups! If you're like me and don't want to bother peeling, seeding, and chopping fresh mangoes, about half a package of frozen mango (1 1/2 cups worth) should do just fine. Ingredients:
2 mangoes, peeled seeded & diced |
1 (8 ounce) can pineapple tidbits in juice, drained and chopped |
1/4 cup cilantro leaf |
2 tablespoons peeled and freshly minced ginger |
1/2 cup red onion, chopped |
1/4 cup rice vinegar (or apple cider vinegar) |
1 teaspoon crushed red pepper flakes (or to taste) |
Directions:
1. Combine all the ingredients together and mix well, chill before serving. |
