Healthy Oatmeal Surprises |

These are both healthy and delicious...my favorite combination! I adapted this from a recipe I found online when I first started baking.My friends and boyfriend always ask for them, and there is lots of room for substitutions, so they never get boring! Ingredients:
3/4 cup butter (i sometimes substitute 1/2 cup unsweetened applesauce for a softer, sweeter-and healthier-cookie) |
1/2 cup white sugar |
1 cup packed brown sugar |
2 egg whites |
1 egg |
1 teaspoon vanilla extract |
1 1/2 cups whole wheat flour |
1 teaspoon baking soda |
1 teaspoon ground cinnamon |
1/8 teaspoon ground nutmeg |
1/2 teaspoon salt |
3 cups quick-cooking oats |
1/2 cup chocolate chips |
1/2 cup raisins (or nuts, chips or other dried fruit- whatever strikes your fancy) |
Directions:
1. Preheat oven to 350 degrees F. 2. Cream together butter and white and brown sugars until light and fluffy in a large bowl. 3. Add egg whites and egg one at a time, beating well with each addition. 4. Stir in vanilla. 5. In a separate bowl, combine flour, baking soda, cinnamon, nutmeg, and salt; gradually stir into the creamed mixture. 6. Stir in quick oats, chocolate chips and raisins. 7. **Optional if using raisins: Bring 1 cup of water to a boil. Add 1/2 cup raisins, remove from heat, and soak for 10 minutes. Drain and cool before adding them to batter**. 8. Drop batter by heaping spoonfuls onto an ungreased cookie sheet. 9. Bake 8-10 minutes (longer if your spoonfuls are REALLY heaping). Cool 5 minutes on cookie sheet before transferring to wire rack to cool completely. |
