From Everyday Food, September 2007. Ingredients:
1/2 cup whole wheat flour |
1/2 cup all-purpose flour |
1 teaspoon baking powder |
1/3 cup vegetable oil |
2/3 cup packed dark brown sugar |
1 large egg |
1 teaspoon pure vanilla extract |
1/2 cup rolled oats (not quick-cooking) |
1/2 cup dried currants or 1/2 cup raisins |
Directions:
1. Preheat oven to 350 degrees. 2. In a medium bowl, whisk together flours and baking powder; set aside. 3. In a large bowl, whisk together oil, sugar, egg, and vanilla. 4. Add flour mixture, and stir to combine; mix in oats and currants. 5. Using two tablespoons of dough per cookie, roll into balls; place on two baking sheets lined with parchment paper, 1 1/2 inches apart. 6. Bake until lightly browned, 15 to 17 minutes. 7. Cool 5 minutes on sheets, then transfer cookies to a wire rack to cool completely. |
