Healthy-Ish Chewy No-Bake Cookies |

I modified my favorite no-bake cookie recipe, hoping to make it a little healthier and diet-friendly. I reduced the fat and used 1 cup fructose instead of 2 cups of sugar. A nice side effect of this was that fructose tends to make foods moister than table sugar, and I ended up with a chewy no-bake (I don't like the dryness of tradtional no-bakes) So, if you want a healthier cookie or just a chewier cookie, this is it! Ingredients:
4 tablespoons cocoa |
1 cup fructose |
1/2 cup soymilk |
1/4 cup margarine |
1/2 cup smooth peanut butter |
1 1/2 teaspoons vanilla |
2 1/2 cups quick oats |
Directions:
1. Combine cocoa, fructose, milk, and margarine in a saucepan and bring to a full boil. 2. Boil for 1.5 minutes. 3. Immediately remove from heat and stir in Peanut Butter, vanilla, and oats. 4. Drop by spoonfuls onto waxed paper. |
